- 40 g plain flour (sponge flour)
- 40 g yuzu cha (Yuzu Jelly Tea), marmalade, or any jam of your taste
- 30 ml milk
- For 17cm chiffon cake tine, make it double with 4 eggs
Steps to make to make Diet-friendly Chiffon Cake
- Preheat the oven to 170 degrees (for a fan oven, it should be slightly lower) and oil the chiffon cake tin and dust the tin with flour.

- Separate the egg york and egg white into two bowls.
- Add jam (or yuzu cha jam) into the egg yolk and whisk (when you are not making with jam, just egg yolk) with a whisk. Then add about one-third of the sugar and mix well. Then add oil little by little until thickened like mayonnaise. Then add lemon juice (or milk etc and flavour mixture) and zest and mix. Then, add flour (I used sponge flour), mix and put it aside.



- Whisk the egg white with a hand mixer and when it becomes white, add the rest of the sugar/xylitol. Then, make meringue until it gets peaks.


- Add a big spoon full of the meringue into the egg yolk bowl and mix with a whisk or spatula. Then add another spoon full of meringue and mix.

- Add all step 5 (egg yolk) into the rest of the meringue (step 4) and mix with a spatula. Try to mix as if you cut it, in order not to destroy the air bubbles in the meringue.
- Pour the dough into the cake pan and drop the cake tin a few times to get rid of air bubbles in the cake. Bake for about 20 mins at 170 degrees, depending on the size of the cake tin.
(If you use a 17cm cake tin, use 4 eggs with double the ingredients and bake it for about 30-35 mins)
- Put the cake tin upside down and leave it cool. The cake should be moist, soft and light.
- I used this yuzu cha (Yuzu Jelly Tea). You can get it from Waitrose and it is just like Japanese Yuzu cha. It gives you beautiful Yuzu flavour to the cake. It is different from Lemon or orange and I love it.
